Granny Beth’s Oatmeal Cookies

1 cup raisins
2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3/4 cup shortening
1 cup sugar
2 eggs
1 tbsp. raisin juice
2 cups quick cooking oatmeal

Cover raisins with water and cook until tender. Cool in liquid.

Preheat oven to 375 degrees. Grease cookie sheet.

Sift flour, measure and add baking soda, cinnamon and salt. Cream butter and sugar. Add eggs one at a time, beat well. Add raisin juice and mix. Blend in flour mixture. Add oatmeal. Fold in raisins. Drop by teaspoonfuls onto a greased cookie sheet.

Bake about 10 minutes or until barely brown. Cool and store in layers with waxed paper between layers.
