Hasselback Potatoes
Ingredients
12 to 16 large new potatoes
1/4 cup butter, melted
1 tsp. salt
1/2 tsp. pepper
2 tbsp. bread crumbs
Directions
Pare the potatoes. Using a sharp knife, score the potatoes in slices a little less than 1/4 inch wide, cutting about 2/3 of the way through. Drop each potato in cold water as scored. Dry potatoes well.
Pour melted butter in a casserole dish large enough to hold all the potatoes without cramming. Put the potatoes in the casserole dish and baste well with the butter. Sprinkle with salt and pepper.
Bake at 400 degrees for 25 minutes. Baste again with butter, sprinkle with bread crumbs and continue baking until potatoes are crisply roasted and tender, about 10 minutes.
