Hot Cross Muffins

Ingredients
1-2/3 cups flour
2/3 cup granulated sugar
2 tsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. salt
1 egg
1/3 cup vegetable oil
2/3 cup evaporated milk
3/4 cup raisins

Topping
1/4 cup powdered sugar, sifted
1-1/2 tsp. evaporated milk

Directions
Sift flour, sugar, baking powder, cinnamon and salt into a medium sized bowl. Make a well in the center of the flour mixture. Beat together egg, oil and 2/3 cup evaporated milk. Pour into the well. Stir with a wooden spoon until flour mixture is evenly moistened. Stir in raisins.

Spoon into buttered muffin tins, filling each cup 2/3 full. Bake at 400 degrees for 20 minutes. Remove from tins and allow to cool for 5 minutes.

Make topping by combining the powdered sugar and remaining evaporated milk. Drizzle over the top of each muffin to form a cross. Serve warm. Makes 12 muffins.
