Hot Slaw
Ingredients
1 egg
2 tbsp. flour
1 tsp. salt
1 tsp. dry mustard
2 tsp. sugar
dash cayenne
2 tbsp. butter or margarine
3/4 cup milk
1/4 cup vinegar
1 medium cabbage head
Directions
Beat the egg in a bowl, then mix in the flour, salt, mustard, sugar and cayenne until smooth.
Melt the butter or margarine in the top of a double boiler. Place over boiling water and stir in the egg mixture and milk thoroughly. Add the vinegar very slowly, beating constantly, and cook over boiling water for 5 minutes or until the sauce is as thick as mayonnaise.
While the sauce is cooking, shred the cabbage as for cole slaw and cook in boiling salted water for 6 to 8 minutes or until tender but still on the crisp side.
Drain the cabbage thoroughly and mix with the hot sauce. Serve hot as a vegetable. Serves 6.
