Idaho Bean Soup
Ingredients
2-1/2 qt. water
5 oz. sliced ham hock or a chunk of bacon
1-1/2 cups navy beans
3 tbsp. diced onion
1 cup mashed potatoes
1 tsp. chopped parsley
2 tbsp. chopped celery
3 tbsp. butter
1 tsp. salt, pepper if desired
Directions
Sort dry beans to remove any foreign material. Braise onion pieces in butter until tender.
Mix all of the ingredients in a heavy sauce pan. Cover and simmer for 2-1/2 hours. Makes 2-1/2 quarts.
