Kaiser Schmarren

Ingredients
2 eggs, separated and beaten
2 tsp. sugar
1/8 tsp. salt
1/3 cup milk
1 tsp. vanilla
3/4 cup flour
3 tbsp. melted butter

Directions
Beat egg whites, then beat yolks. Beat sugar and salt into yolks until light. Stir in milk, vanilla and flour. Fold in egg whites. Pour 2 tablespoons of the butter into a 10-inch skillet. Turn in batter, spreading evenly. Work with 2 spoons and turn small portions until brown. Add the remaining tablespoon butter to brown pieces. Serve with sugar or syrup.
