Kraut Surprise Cake
Ingredients
2/3 cup butter or margarine
1-1/2 cup sugar
3 eggs
1 tsp. vanilla
1/2 cup cocoa
2-1/4 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup water
2/3 cup rinsed, drained and chopped sauerkraut
Directions
Cream butter with sugar. Beat in the eggs one at a time. Add the vanilla and stir in.
Sift together the cocoa, flour, baking powder, baking soda and salt. Add the sifted mixture to the creamed mixture alternately with water. Stir in the sauerkraut.
Turn the batter into two greased and floured 8-inch square or round cake pans.
Bake at 350 degrees for 30 minutes, or until the cake tests done.
Dust with confectioners' sugar or put layers together with whipped cream or Mocha Cream.
Mocha Cream
Ingredients
1-1/2 cups heavy cream
3 tbsp. sugar
1 tbsp. instant coffee
1 tsp. rum
Directions
Combine ingredients and whip together until soft peaks form.
