Lady Fingers
3 egg yolks 1/2 cup granulated sugar 1/2 cup cake flour 1/2 tsp. vanilla 3 egg whites
Topping
2 tbsp. powdered sugar 1 tbsp. granulated sugar
Beat egg yolks and sugar until light. Gently fold in flour and vanilla until smooth. Batter will be thick. Beat egg whites to a peak, then fold batter and whites together until just blended. For each finger drop 2 teaspoonfuls batter on a lightly oiled cookie sheet. Use a spatula to shape into 1x3 inch fingers. Lightly sprinkle with topping.
Bake at 350 degrees for 8 minutes. Cool on a wire rack.
