Latke

Ingredients
2 cups grated raw potatoes (drain before measuring)
2 eggs, beaten
1 tsp. salt
1 tbsp. flour
1/4 tsp. baking powder
1 small onion, grated

Directions
Grate raw potatoes and rinse with water. Drain then measure 2 cups of grated potatoes.

Mix all ingredients together. Drop mixture by tablespoons onto a hot, well greased skillet. Fry on both sides until golden brown.

Serve hot with sour cream or applesauce. Serves 4 to 6.
