Lazy Daisy Cake

Ingredients
2 eggs
1 cup sugar
1 tsp. vanilla
1 cup all-purpose flour
dash salt
1 tsp. baking powder
1/2 cup boiling milk
1 tbsp. butter

Directions
Beat the eggs. Add the sugar gradually while beating constantly. Stir in the vanilla.

Sift the flour, salt and the baking powder together. Add the sifted ingredients to the creamed mixture, beating constantly.

Scald the milk with the butter. Add to the batter, beating until well blended. Pour the batter into a greased and floured cake pan.

Bake at 350 degrees for 25 minutes or until the cake tests done. Set the cake on a wire rack to cool while preparing the icing.

Broiler Icing

Ingredients
5 tbsp. butter, melted
9 tbsp. brown sugar
4 tbsp. whipping cream
1/2 cup coconut or chopped pecans

Directions
Mix all 4 ingredients together. Spread over the cake, then place the cake under a broiler until the icing is browned. Cut the cake in squares and serve hot.
