Lemon Butter Pound Cake

Ingredients
2 pkg. (1 lb. 1 oz. each) pound cake mix
1 tsp. grated lemon rind

Directions
Mix the pound cake as directed on the package. Stir in one teaspoon of grated lemon rind. Spoon the cake batter into a lightly greased and floured tube pan.

Bake at 325 degrees for 1-1/4 to 1-1/2 hours.

When the cake is done remove it from the oven and place it on a rack still in the pan. Pour the glaze evenly over the cake. Allow to cool completely before removing the cake from the pan. Serves 10 to 12.

Lemon Glaze

Ingredients
1-1/2 tsp. grated lemon rind
1/4 cup butter
2/3 cup sugar
2 tbsp. lemon juice
2 tbsp. water

Directions
Cook the lemon rind, butter, sugar and water until the sugar dissolves (about five minutes). Remove from heat.

Orange Glaze Variation

Ingredients
1/4 cup butter
2/3 cup sugar
1/3 cup orange juice

Directions
Prepare the same as the lemon glaze and use grated orange rind in the cake.
