Lemon Gelatin Cake
Ingredients
1 package yellow, lemon or white cake mix
1 package lemon flavored gelatin mix
4 eggs
1 cup boiling water
2 lemons
3/4 cup salad oil
confectioner's sugar
Directions
Dissolve the gelatin in boiling water. Let cool.
In a separate bowl, mix the cake mix, oil and one egg at a time, beating well after each addition. Add the juice of one lemon to the batter. After the gelatin has cooled, pour into the cake batter and mix thoroughly. Pour the batter into a greased and floured 9-1/2x13-1/2 inch baking pan.
Bake at 350 degrees for 45 to 60 minutes.
While the cake is still warm, top it with a glaze made of confectioner's sugar, 1 tablespoon butter and juice of one lemon.
