Lemon Pudding Cake
Ingredients
4 eggs
1 pkg. yellow cake mix
1 pkg. (3-5/8 oz.) instant lemon pudding mix
1/3 cup butter or margarine, melted
3/4 cup water
1/4 tsp. grated lemon rind
powdered sugar, sifted
Directions
Beat the eggs thoroughly until they are thick and yellow. Add the cake mix, pudding mix, melted butter, water and lemon rind. Beat for five minutes to blend thoroughly. Turn the cake batter into an ungreased 10-inch tube pan.
Bake at 350 degrees for 1 hour. Remove the cake from the pan and cool on a wire rack. Dust the top of the cake with sifted powdered sugar.
