Lobster Santa Barbara

Ingredients
8 oz. lobster meat, cooked and chopped
1/2 cup mayonnaise
1 cup tomatoes, chopped
1/4 cup green onions, chopped
1/3 cup celery, chopped
2 tbsp. chopped pimiento
lemon juice
4 large avocados
5 tbsp. dry bread crumbs
1 tbsp. melted butter

Directions
Place lobster meat, mayonnaise, tomatoes, green onions, celery and pimiento in a large bowl and gently mix.

Halve the avocados and remove the seeds. Brush the avocado halves with lemon juice then fill the centers with the lobster mixture. In another bowl, mix the bread crumbs with the melted butter. Top each filled avocado with the bread crumb mixture. Put the lobster filled avocado halves into a shallow oven-safe casserole dish.

Bake at 400 degrees uncovered for 10 minutes and serve hot. Serves 8.
