Marshmallow Fudge Squares
3/4 cup sifted flour 2 tsp. cocoa 1/4 tsp. baking powder 1/4 tsp. salt 1/2 cup shortening 3/4 cup sugar 2 eggs 1/2 cup chopped pecans 1 tsp. vanilla 1 cup miniature marshmallows
Sift together flour, cocoa, baking powder and salt. Cream shortening and sugar together, then beat in eggs one at a time. Add the sifted ingredients and mix well. Stir in the nuts and vanilla. Spread in a greased and floured 9-inch square pan.
Bake at 350 degrees for 30 minutes. Spread marshmallows over evenly and return to the oven for 3 minutes, or until the marshmallows are soft. Cool, then spread with chocolate frosting.
Chocolate Frosting
1/2 cup brown sugar, packed 1/4 cup water 2 squares unsweetened chocolate 3 tbsp. butter 1 tsp. vanilla 1-1/2 cups sifted confectioner's sugar
Boil the brown sugar, water and chocolate together for 3 minutes. Add the butter and vanilla. Cool. Blend in confectioner's sugar.
