Mexican Hominy
Ingredients
1 can hominy
1 can chili (with or without beans)
1 medium onion, chopped
1 cup lightly crushed corn chips
1 cup grated cheddar cheese
Directions
Heat the chili in a small saucepan. Chop the onion, grate the cheese and crush the corn chips lightly.
Place the hominy in a baking dish. Pour the heated chili over the hominy and add the chopped onion and crushed corn chips. Top with the grated cheddar cheese.
Bake at 350 degrees for 25 minutes.
