Mocha Nut Logs

1 cup light brown sugar, firmly packed
1/3 cup evaporated milk
2 tbsp. light corn syrup
1 package (6 oz.) chocolate bits
1 tsp. instant coffee
2 tsp. vanilla
1 cup chopped walnuts

Combine sugar, syrup and milk in a heavy 1 quart pan. Bring to a full boil and boil for 2 minutes, stirring constantly. Remove from heat and add chocolate bits, coffee and vanilla. Stir until chocolate melts. Beat until thick and smooth, then add nuts.

Make two rolls 10 inches long and wrap each in waxed paper. Chill for 2 hours then slice to serve. About 20 slices.
