Molded Tomato Salad
Ingredients
3 cups cooked tomatoes
1/2 cup celery, finely chopped
1 bay leaf
2 whole cloves
1 tsp. paprika
1 tbsp. sugar
1-1/2 tsp. salt
1 tbsp. unflavored gelatin
1/2 cup cold water
2 tbsp. diced pimientos
lettuce
mayonnaise
prepared mustard
olives
Directions
Cook tomatoes with celery, bay leaf, cloves, paprika, sugar, and salt. Bring to a boil. Soak gelatin in cold water then add to boiling tomatoes. Strain. Add pimientos and pour into individual molds about the size of whole tomatoes, or into a large flat pan so that individual cuts may be made.
On a salad plate make a nest of lettuce leaves. Place molded tomato in the center. Serve with mayonnaise and mustard to season. Garnish with olives.
