Nine Minute Fresh Fruit Pie
4 cups blueberries, halved strawberries or sliced skinless peaches 2 tbsp. cornstarch 1/2 cup light corn syrup 2 tsp. lemon juice 1 cup heavy cream, whipped 1 baked pie crust
In a covered blender blend 1 cup of the fruit at high speed for 30 seconds. In a 2-quart saucepan mix the cornstarch and water until smooth. Add mashed fruit from blender, corn syrup and lemon juice. Bring to a boil over medium heat while stirring constantly and boil for 1 minute. Turn into a bowl, cover surface with waxed paper and cool for 1 hour. Fold into remaining fruit. Spread whipped cream onto bottom and sides of pie crust and fill with fruit mixture. Chill for 3 hours or until set. Serves 6.
