No Knead Sweet Bread

Ingredients
2 cups unbleached flour
1/3 cup sugar
1-1/2 tsp. salt
2 pkg. dry yeast
2 cups orange juice
1/4 cup cooking oil
1 egg
1 cup raw carrots, grated
1/2 to 1 cup raisins
1/2 cup chopped nuts
2-1/2 to 3 cups flour

Directions
Combine flour, sugar, salt and dry yeast. Heat juice and oil to warm over low heat. Add eggs and liquid to flour mixture. Blend until moistened. Beat two minutes. Add carrot, nuts and raisins. By hand, stir in gradually all the flour you need to form a stiff batter. Cover and let rise until doubled in size. Stir down and spoon into 2 quart round casserole or 9x5x3 inch loaf pan.

Bake at 375 degrees for 45 to 50 minutes. Glaze with powdered sugar glaze if desired.
