Old Fashioned Baked Beans
Ingredients
2 cups dried navy beans
6 cups water
1 onion
2 whole cloves
3/4 cup dark molasses
1/4 cup brown sugar, firmly packed
2 tsp. dry mustard
1/4 lb. salt pork
Directions
Sort the beans to remove any foreign objects, then rinse the beans thoroughly. Place the beans in a large container and cover with water. Cover the container and refrigerate overnight.
Drain and place the beans in a large kettle. Add 6 cups of cold water. Bring to a boil then cover and simmer until the beans are almost tender. Drain the beans, reserving liquid.
Poke the cloves into the onion and place in a crockery pot. Add the beans. Combine the molasses, brown sugar, dry mustard and 1 cup of the reserved bean liquid. Pour over the beans and mix all well. Cut the salt pork every 1/2 inch nearly but not quite all the way through. Place the pork cut-side down in the beans and add the remaining reserved bean liquid until the beans are just covered.
Cover and bake at 300 degrees for 4 hours. Uncover and bake 30 minutes longer, allowing top of the beans to brown. Serves 6 to 8.
