Old Fashioned Tapioca Pudding
3 tbsp. large tapioca 1 cup cold water 1 quart milk 3 egg yolks 3/4 cup sugar 1/2 tsp. vanilla 3 egg whites, beaten to stiff peaks
Soak tapioca in cold water overnight. In the morning drain any water left.
Put the tapioca in a double boiler, add milk and cook until clear. Add egg yolks and sugar. Cook 3 more minutes. Remove from heat then add vanilla and fold in beaten egg whites.
