Old World Potato Pancakes
Ingredients
3/4 cup pancake mix
3/4 tsp. salt
1 cup milk
1 egg, beaten
3 tbsp. melted butter
2 cups potatoes, peeled and grated
1/4 minced onion
Directions
Combine pancake mix and salt in a bowl. Add milk, egg and butter, stirring until batter is fairly smooth. Stir in potatoes and onion. For each pancake, pour 1/4 cup batter onto a hot, lightly greased griddle. Bake until golden brown, about 4 minutes on each side, turning only once. Serve with applesauce and sour cream. Makes 10 to 12 pancakes.
