Orange Juice Christmas Cake
Ingredients
1/2 lb. butter
2 cups sugar
2 eggs
3-1/2 cups flour
1/2 cup buttermilk
1 tsp. baking soda
2 tbsp. grated orange rind
1/2 cup flaked coconut
1 pkg. dates, chopped
1 cup pecans, chopped
Directions
Cream the butter and sugar together. Add the eggs and orange rind, then add 3 cups of flour. Beat until the mixture is fluffy.
Dissolve the baking soda in the buttermilk then add gradually to the batter. Combine 1/2 cup flour with the coconut, nuts and dates and mix together with the other ingredients.
Bake at 325 degrees for 1 hour 15 minutes in a greased and floured angel food cake pan.
Remove the cake from the oven and punch holes in the top with a fork. Make the following icing.
Orange Juice Icing
Ingredients
1 cup fresh orange juice
2 cups sugar
Directions
Heat one cup of fresh orange juice and 2 cups of sugar until the sugar melts and dissolves. Pour the icing over the cake.
Return the cake to the oven for 5 minutes. Allow the cake to cool thoroughly before removing from the pan, overnight if possible.
