Oriental Shrimp and Vegetables
Ingredients
2 tbsp. butter or margarine
4 green onions, sliced
1 tbsp. cornstarch
1/4 cup soy sauce
1 can (8 oz.) water chestnuts, drained and sliced
1 can (8 oz.) bamboo shoots, drained
1 can (4 oz.) mushroom pieces, drained
1 envelope instant chicken broth
1/4 tsp. ground ginger
1 lb. frozen shelled and deveined shrimp
1 pkg. (6 oz.) frozen snow peas
Directions
Combine butter and onions in a 2 quart glass casserole. Cook uncovered in microwave for 2 to 3 minutes, or until bubbly. Combine cornstarch and soy sauce. Stir into casserole with water chestnuts, bamboo shoots, mushrooms, chicken broth, ginger and shrimp.
Cook, covered, in microwave for 8 minutes. Stir in snow peas and cook covered 3 to 4 minutes longer or until mixture boils and shrimp are firm. Serve over hot cooked rice if desired. Serves 6.
