Oven Crisp Chicken

Ingredients
1 cup cracker meal
1/2 cup grated parmesan cheese
1/2 cup ground walnuts
3/4 tsp. salt
2 eggs
1 cup buttermilk
1 broiler-fryer chicken (2-1/2 to 3 lbs.) cut up
1/2 cup butter, melted

Directions
Preheat oven to 400 degrees.

Combine cracker meal, cheese, walnuts and salt. Beat together eggs and buttermilk. Roll chicken in cracker meal mixture until it picks up a fine, even coat. Dip into egg mixture, then roll again in cracker meal mixture to coat thoroughly.

Place in a single layer in a 13x9x2 inch baking pan. Brush with melted butter. Bake, basting occasionally with butter drippings, for 1-3/4 hours or until chicken is tender and well browned.
