Ozark Cake

Ingredients
2-1/4 cups sugar
1/2 cup margarine
2 eggs
2-1/3 cups plus 1 tbsp. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1-1/2 lb. apples, peeled and chopped
1 cup walnuts

Directions
Cream the sugar, margarine and eggs together until the mixture is evenly blended.

Sift the flour, baking soda, salt, cinnamon and nutmeg together. Combine the creamed mixture with the flour mixture and mix with a whisk or beater until thoroughly combined.

Fold in the chopped apples and walnuts. Turn the batter into a 12x7-inch baking pan.

Bake at 325 degrees for 45 minutes or until the cake tests done.
