Peach Tapioca Pudding
1 egg, slightly beaten 1/3 cup sugar 3 tbsp. quick cooking tapioca 1/8 tsp. salt 2-1/4 cups milk 3/4 tsp. vanilla 1 cup sliced canned or sweetened fresh peaches
Mix egg, sugar, tapioca, salt and milk in a 2 quart saucepan. Let stand 5 minutes. Cook over medium heat. Stir constantly until mixture comes to a full boil and is slightly thickened, about 6 to 8 minutes. Remove from heat and add vanilla. Cool. Fold in peaches then chill. Serves 4 to 5.
