Peanut Brittle
Ingredients
2 cups sugar
1 cup white corn syrup
1/2 cup water
2 tbsp. butter or margarine
2 cups salted peanuts
1 tsp. vanilla
3 tsp. baking soda
Directions
Oil a jelly roll pan or a large cookie sheet.
Combine sugar, syrup and water in a large deep sauce pan. Bring to a boil and cook at 200 degrees on a candy thermometer. Add butter and peanuts and continue cooking until the thermometer reads 310 degrees. Stir constantly to prevent scorching.
Remove from heat and add vanilla and baking soda. Stir quickly as candy becomes foamy. Immediately pour into the oiled pan and spread as thin as possible with the back of a spoon. Cool, turn candy out of pan and break into pieces.
Store in a tightly covered jar or can. Makes about 2 pounds.
