Perfect Strawberry Preserves

2 boxes slightly under ripe strawberries
1-1/2 tbsp. cider vinegar
4 cups sugar

Place hulled and cleaned berries in a 4 quart heavy pan and add vinegar. Bring to a boil and cook rapidly for exactly 3 minutes, shaking pan in a circular motion occasionally to prevent sticking. Add sugar and bring to a full rolling boil, and boil for exactly 6 minutes. Remove from heat and cool in pan. Shake in a circular motion occasionally to plump berries. Let stand overnight, pack in hot sterilized jars and seal. Store in a dark place. Use jars with self seal lids, don’t use paraffin. Don't try to double recipe.
