Persimmon Nut Bread
Ingredients
1-1/4 cups sifted flour
1 cup granulated sugar
1-1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 tsp. baking powder
1 cup persimmon pulp
1/2 cup soft bread crumbs
1 cup chopped dates
1 cup chopped walnuts
1 tsp. vanilla
1-1/2 tsp. butter or margarine
1/2 cup milk
Directions
Sift flour again with sugar, soda, salt and baking powder. Combine remaining ingredients. Add, and mix thoroughly. With pastry brush, oil bottoms and sides of clean soup cans. Fill cans about half full.
Bake at 350 degrees until bread is firm on top, approximately 1 hour. Lay cans on side to cool.
