Pineapple Island Bread

Ingredients
2-1/2 cups sifted flour
1/2 cup sugar
4 tsp. baking powder
1 tsp. salt
1/2 cup wheat germ
1 can (8-3/4 oz.) crushed pineapple
1 beaten egg
1/3 cup soft butter
1/3 cup milk

Directions
Resift flour with sugar, baking powder and salt. Stir in the wheat germ. Add the undrained crushed pineapple and all remaining ingredients. Mix until thoroughly blended, the batter will be stiff.

Turn the batter into a greased and floured 9x5x3 inch loaf pan. Allow to stand for 15 minutes.

Bake at 350 degrees for 55 to 60 minutes or until loaf tests done. Cool in pan for 10 minutes then turn out on a rack. Makes 1 loaf.
