Pineapple Nut Bread
Ingredients
2 eggs
1/3 cup sugar
1/3 cup melted shortening
2 cups sifted flour
3 tsp. baking powder
1 tsp. salt
3/4 cup chopped pecans
1 cup crushed pineapple
Directions
Beat eggs and sugar together. Stir in shortening. Add sifted flour, salt and baking powder, then blend. Add nuts and pineapple (do not drain) and stir enough to combine ingredients.
Pour into a loaf pan and bake at 350 degrees for 1 hour.
