Pineapple Upside-down Cake
Ingredients
2 egg yolks
1 cup sugar
1/4 cup butter
1/2 cup pineapple syrup
1-1/2 cup flour
1/2 tsp. salt
2 tsp. baking powder
2 egg whites
1 tsp. vanilla
For the Bottom:
2 tbsp. butter
3/4 cup brown sugar
pineapple slices
Directions
Cream the butter and sugar together. Add the egg yolks and mix thoroughly. Add in the remaining ingredients and beat to make a smooth batter.
In a baking pan put the two tablespoons of butter and 3/4 cup brown sugar. Heat to melt the butter and sugar together. Cover the bottom with the slices of pineapple.
Pour in the cake batter.
Bake in a moderate oven (about 350 degrees) until the cake tests done.
