Porcupine Meatballs
Ingredients
1 lb. ground beef
1/2 cup rice
1 tsp. salt
1/8 tsp. pepper
1/2 green pepper, sliced
1 onion, diced
1 tbsp. oil
2-1/2 cups tomato juice
Dash nutmeg
Salt
Pepper
Directions
Combine meat, rice, salt and pepper. Mix well and shape into 8 balls that are 1-1/2 inch in diameter. Place in a shallow baking dish.
Brown green pepper and onion lightly in oil. Add tomato juice, nutmeg and more salt and pepper to taste. Bring to a boil and pour over meatballs.
Cover and bake at 350 degrees for 1 hour or until rice is tender. Serves 4.
