Potato Cake

Ingredients
2 cups sugar
2/3 cup butter
2 eggs, separated
1 cup mashed potatoes
1/2 cup cocoa
1 cup flour
1 tsp. cinnamon
1 cup milk
1 tsp. baking soda
1 cup chopped nuts
1 tsp. vanilla

Directions
Cream the sugar and butter together, then add lightly beaten egg yolks. Blend in the mashed potatoes.

Dissolve the baking soda in the milk. Beat the egg whites until stiff peaks form.

Combine the cocoa with the flour and cinnamon and add to the creamed mixture alternately with the milk in which the baking soda has been dissolved. Then add enough flour to make a normally thick cake batter.

Add the nuts and fold in the egg whites that have been beaten stiff. Add the vanilla and blend evenly. Pour the batter into a greased and floured loaf pan.

Bake at 350 degrees until a toothpick stuck in the center comes out clean.
