Potato Pancakes #1
Ingredients
2 lbs. potatoes
1 small onion, grated
1/4 cup flour
1-1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
2 tbsp. finely chopped parsley
1/4 cup melted butter
2 eggs, slightly beaten
1/4 cup oil for frying
Directions
Grate potatoes, cover with ice water for 10 to 15 minutes. Drain until as dry as possible. Add rest of the ingredients. Heat 1 tablespoon of oil in a skillet. Brown well until done, using 2 tablespoons of oil for each pancake.
