Pot Roast

Ingredients
4 lbs. chuck roast
2 tbsp. flour
4 tbsp. bacon drippings
3 tsp. salt
1/4 tsp. pepper
1 quart water

Directions
Wipe the meat with a cloth wrung out of cold water. Rub the surface of the meat with flour then sear on all sides in hot bacon drippings until the flour turns a golden brown. Season with salt and pepper.

Place the roast in a large pot. Add water and cook slowly for approximately 2-1/2 hours until meat is tender, adding boiling water as necessary. Serves 12.
