Pudding Icing for Fruit Pudding Cake
1/2 cup butter 1 cup confectioner's sugar 1/2 cup evaporated milk 1 egg yolk 3 tsp. vanilla 1 cup shredded coconut 1/2 cup chopped dates
Place butter, sugar, milk and egg yolks in a heavy pan. Bring to a boil and cook for 2 minutes, stirring constantly. Add vanilla, coconut and dates, mix well. Cool slightly and spread on top of warm cake.
