Quick Pralines

1 package (3 oz.) vanilla flavor pudding and pie filling mix
1-1/2 cups light brown sugar, firmly packed
1/2 cup evaporated milk
1 tbsp. butter or margarine
2 cups pecan halves

Combine pudding mix, brown sugar, evaporated milk and butter or margarine in a medium sized heavy saucepan. Heat slowly, stirring constantly, until sugar is dissolved. Cook without stirring to 238 degrees on a candy thermometer. A teaspoonful of syrup will form a soft ball when dropped in cold water. Remove from heat.

Stir in pecans and beat with a wooden spoon for 2 to 3 minutes, or until the mixture begins to thicken. Drop by teaspoonfuls onto waxed paper, 2 inches apart. If the mixture hardens, set the pan over hot water to soften. Allow to stand until firm. Makes about 42 pralines.
