Raised Doughnuts

Ingredients
1 cup sugar
1 cup milk, scalded
2 tbsp. butter or margarine, melted
1/2 tsp. salt
2 eggs, beaten
flour
1/2 cake dry yeast
1/4 cup lukewarm water
1/4 tsp. cinnamon

Directions
At night scald milk and add butter and salt. Cool until lukewarm. Add yeast, softened in lukewarm water, and cinnamon. Cut in enough flour to make a soft roll dough. Cover and let rise overnight.

In the morning, cut down then add sugar, eggs and more flour to form a soft roll dough. Cover and let rise until doubled in bulk. Turn onto a lightly floured board, roll to 1/3-inch thickness and cut with a lightly floured cutter.

Deep fry at 365 degrees until golden brown. Drain doughnuts on paper towels. Makes about 48 doughnuts.
