Refrigerator Bran Muffins

Ingredients
1 cup flaked bran (found in natural food stores) (do not use bran cereal as a substitute!)
1 cup boiling water
1/2 cup slightly softened butter or margarine
1/2 cup brown sugar, packed
2 eggs
2 cups buttermilk or plain yogurt
2 cups all bran cereal
2-1/2 cups unbleached flour
2-1/2 tsp. baking soda
1 tsp. salt

Directions
Combine flaked bran and boiling water then let stand for 5 minutes.

Cream butter and sugar, then beat in eggs. Stir in buttermilk and bran cereal. Combine flour with baking soda and salt. Add to mixture along with the soaked bran. Stir until well blended. Cover and store in the refrigerator until needed. It will last up to 2 weeks. When ready to bake, spoon batter into greased muffin cups, filling each about 2/3 full.

Bake in a preheated 400 degree oven for 20 to 25 minutes. Makes 2-1/2 dozen.
