Refrigerator Cookies

1 cup soft shortening
2 cups brown sugar
2 eggs
1 tsp. vanilla
3-1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt

Mix shortening, brown sugar, eggs and vanilla together. Sift flour, baking soda and salt together. Gradually add flour mixture to the shortening mixture, beating with a spoon to make sure all is evenly mixed. Form a roll and wrap in waxed paper. Chill until firm.

Preheat oven to 400 degrees. Use a thin knife to make 1/2-inch thick slices and place a little bit apart on an ungreased cookie sheet. Bake 8 to 10 minutes.
