Regal Banana Cake

Ingredients
1/2 cup butter
1 cup sugar
3 eggs, separated
1-1/2 cups sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1 cup graham cracker crumbs (about 14 squares)
1 cup mashed bananas
1/3 cup buttermilk
1/2 cup chopped nuts

Directions
Cream together the butter and 1/2 cup sugar until light and fluffy. Beat in the egg yolks.

Sift together the flour, baking powder, baking soda and salt. Combine with the graham cracker crumbs. Add to the creamed mixture alternately with mashed banana and buttermilk.

Beat the egg whites until foamy. Gradually add the remaining 1/2 cup sugar and continue beating until stiff and glossy. Fold into the cake mixture along with the nuts. Pour the batter into a buttered 9x13x2-inch baking pan.

Bake at 350 degrees for 35 to 40 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool then frost or sift confectioners sugar over the top. Serves 12.
