River Chili
Ingredients
2 lbs. coarse ground lean beef
1 medium onion, chopped
1 clove garlic, minced
1/2 tsp. oregano
1/2 tsp. ground cumin
3 tsp. chili powder
1 can (1-lb.) tomatoes
Directions
Brown meat, onion and garlic in a heavy skillet or Dutch oven. Add oregano, cumin and chili powder. Add tomatoes and water. Salt to taste. Bring to a boil, then reduce heat and simmer for 1 hour uncovered. Skim off fat. Serve with beans if desired.
