Rocky Road Walnut Drops
1/2 cup butter 2/3 cup packed brown sugar 1 tsp. vanilla 1 egg, beaten 1/2 cup semisweet chocolate chips, melted 12 to 14 marshmallows 1/2 cup chopped walnuts 1-1/2 cup flour 1/2 tsp. baking soda 3/4 tsp. salt 1 tsp. instant coffee, powdered 36 to 40 walnut halves or large pieces
Chocolate Frosting
1/4 cup butter 1/3 cup milk 1/2 cup chocolate chips 1/4 tsp. salt 1 tsp. vanilla 2-1/2 cup powdered sugar, sifted
Cream butter with sugar and vanilla. Sift flour, baking soda, salt and instant coffee together. Mix in creamed mixture and milk. Blend well. Drop by teaspoonfuls onto a cookie sheet and bake at 350 degrees for 10 minutes.
Top each cookie with a slice of a marshmallow that has been sliced into 3 parts. Then top each cookie with a large piece or half of a walnut. Press down lightly to stick. When cookies are almost cool, place on waxed paper on a rack and carefully spoon chocolate frosting over the top of each.
