Seaside Macaroni Salad
Ingredients
8 oz. elbow macaroni
2 cans (6-1/2 oz. each) crab meat, drained and flaked
1 cup mayonnaise
2 tbsp. capers
2 tbsp. prepared mustard
1 tbsp. horseradish, prepared
1/4 cup sliced scallions
2 cups shredded lettuce
1 tsp. salt
1/4 tsp. pepper
2 hard cooked eggs
Directions
Cook macaroni as directed on the package, drain, rinse in cold water and drain again. Combine all ingredients except the eggs with the macaroni. Toss and chill. Garnish with eggs.
