Shrimp Pilaf

Ingredients
1 cup rice
1-1/4 cups water, boiling
1 tsp. butter or margarine
3 tbsp. finely chopped onion
2 tbsp. finely chopped fresh parsley
2 tbsp. finely chopped capers
1 tbsp. lemon juice
1 tbsp. olive oil
1 can (6 oz.) shrimp, drained
salt and pepper to taste

Directions
In a small saucepan bring the water to a boil, then add the rice and butter. Cook according to package directions until the rice is done and the liquid has been absorbed.

Using a mixing bowl, toss the rice, onion, parsley and capers together. Drizzle lemon juice and olive oil over the rice mixture, then toss to mix the ingredients evenly. Stir shrimp into the rice mixture. Season with salt and pepper if desired. Serves 2.
