Skillet Cabbage
Ingredients
1 medium onion
1 green pepper
3 stalks celery
1 or 2 large tomatoes
1/2 medium cabbage
1 tbsp. bacon drippings
1 tsp. salt
1/4 tsp. pepper
Directions
Chop the onion, green pepper (remove the seeds and ribs), celery, tomato and cabbage quite fine.
Melt bacon drippings in a skillet, toss in the chopped vegetables and season with salt and pepper. Mix well, cover and cook over moderate heat for 5 to 8 minutes or until the cabbage is tender but still on the crisp side. Stir occasionally during cooking. Serves 4.
