Snow White Cake
Ingredients
2 cups sugar
1/2 cup shortening
3 cups pastry flour
1/2 tsp. salt
1 cup milk
4 egg whites, stiffly beaten
1/2 tsp. lemon extract
1/2 tsp. almond extract
4 tsp. baking powder
Directions
Cream the sugar and shortening together. Add the milk, lemon extract and almond extract. Sift together the dry ingredients, then add to the creamed mixture. Fold in the stiffly beaten egg whites. Pour the cake batter into 3 greased 10-inch layer cake pans.
Bake at 375 degrees for 20 minutes.
When cool, put together with the following filling:
Snow White Filling
Ingredients
4 egg yolks
1 cup sugar
1/4 tsp. salt
2 tbsp. flour
1/4 cup cold water
juice and rind of one lemon
2 tbsp. shortening or butter
Directions
Beat the egg yolks until light. Mix the sugar, salt and flour together, then blend into the beaten egg yolks. Add the water, lemon juice and lemon rind. Cook in a double boiler until the mixture is thick. Add shortening or butter just before removing from heat.
